Chipotle Cocoa Rubbed Salmon
Chipotle cocoa-rubbed salmon is seasoned with a bold blend of smoky chipotle peppers and rich cocoa powder, creating a spicy, slightly sweet crust. This flavorful dish delivers a unique and delicious twist on classic salmon.
Ingredients
- 1 heaping teaspoon miss brown’s house seasoning, recipe follows
- 1 teaspoon chipotle chile powder
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon packed dark brown sugar
- four 6-ounce salmon fillets
- 1 tablespoon olive oil
- flaky sea salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Directions
- Preheat the broiler to low. Place an oven rack in the upper third of the oven. Line a baking sheet with parchment paper.
- Stir together the House Seasoning, chile powder, cocoa powder and brown sugar in a small bowl. Pat the salmon fillets dry and place skin-side down on the prepared baking sheet. Brush the top of each filet with olive oil and then rub the spice mixture over the top and sides.
- Broil until the salmon is not quite cooked through and feels firm to the touch, about 10 minutes. Sprinkle with sea salt before serving.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.
