Chopped Salad with Chickpeas Olives & Feta

This quick and easy chopped salad is inspired by the flavors of the Mediterranean, including chickpeas, cucumber and feta. A garlicky oil and vinegar dressing brings everything together.

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 2 tablespoons red-wine vinegar
  3. ¼ teaspoon garlic powder
  4. ¼ teaspoon salt
  5. ¼ teaspoon ground pepper
  6. 1 (15 ounce) can no-salt-added chickpeas, rinsed
  7. 1 cup diced cucumber
  8. 1 cup quartered cherry tomatoes
  9. ⅓ cup chopped parsley
  10. ¼ cup finely chopped red onion
  11. ¼ cup halved kalamata olives
  12. ¼ cup crumbled feta

Directions

  1. Whisk 2 tablespoons oil, 2 tablespoons vinegar, ¼ teaspoon garlic powder, ¼ teaspoon salt and ¼ teaspoon pepper in a large bowl. Add 15 ounces chickpeas, 1 cup cucumber, 1 cup tomatoes, ⅓ cup parsley, ¼ cup onion, ¼ cup olives and ¼ cup feta; toss to coat.
