Egg Tartine

Topping a tomato toast or avocado toast with an egg makes for an easy protein-packed breakfast.

Ingredients

  1. 1 ½ teaspoons extra-virgin olive oil
  2. 4 slices whole-wheat bread, lightly toasted
  3. 1 garlic clove, halved
  4. 1 medium tomato or avocado, sliced
  5. 4 large eggs, fried or poached
  6. 2 tablespoons herbs or microgreens
  7. 4 teaspoons capers, rinsed

Directions

  1. Brush oil onto toast, then rub with garlic. Top with tomato (and/or avocado) and eggs. Sprinkle with herbs (or microgreens) and capers.
