Lamb Chops

Special to the family, the secret to this dish is simplicity. Lamb chops with olive, oil, garlic and fresh herbs. #ShareTheLamb

Ingredients

  1. 8 lamb chops
  2. 3 - 4 tablespoons extra virgin olive oil
  3. 6 cloves of garlic (leave as a whole, or chopped)
  4. 2 - 3 tablespoon of fresh or dry oregano
  5. 1⁄2 bunch of fresh thyme
  6. 2 lemons,quartered and squeezed
  7. 1 - 2 teaspoons of salt
  8. 1 - 2 teaspoons of black pepper
  9. a pinch of paprika chili
  10. 1 tablespoon of rosemary

Directions

  1. Mix all the spices, herbs, lemon juice and oil together in a bowl and marinade the lamb chops on both sides
  2. Leave to marinate in the fridge for 2 - 3 hours, or ideally overnight
  3. Remove chops from fridge and bring to room temperature.
  4. Preheat pan for 3 - 4 minutes, add chops and cook for 2 - 3 minutes each side
  5. Rest for 5 minutes and serve with fresh lemon and salad
