Lamb Souvlaki

Make delicious Lamb souvlaki at home using Lamb leg steaks.

Ingredients

  1. 800g trimmed lamb leg steaks, cut into 2 - 3 cm cubes
  2. juice from two lemons
  3. zest from two lemons
  4. ⅓ cup olive oil
  5. 4 cloves garlic, crushed
  6. 1 ½ tbsp dried oregano
  7. 1 tsp cumin
  8. 1 tsp cracked black pepper
  9. 1 tsp salt
  10. ½ cup fresh parsley, roughly chopped
  11. 3 lebanese cucumbers, sliced
  12. 200 g cherry tomatoes, halved
  13. ½ cup pitted kalamata olives, halved
  14. 1 tbsp olive oil
  15. 2 tsp apple cider vinegar
  16. salt & pepper
  17. flatbread wraps
  18. pickled red onion
  19. tzatziki

Directions

  1. In a large dish or zip-top bag, combine lemon juice, zest, olive oil, garlic, oregano, cumin, pepper, and salt. Add lamb cubes and coat well with marinade. Refrigerate 2-4 hours.
  2. When ready to cook, drain excess marinade and thread lamb onto skewers.
  3. Preheat bbq grill or heavy-based pan to high. Cook lamb skewers for 5-6 minutes, turning to sear all sides. Transfer to a serving platter, cover with foil, and rest 5 minutes.
  4. Combine parsley, cucumber, tomatoes, olives, oil, and vinegar in a bowl. Season to taste with salt and pepper. Serve lamb souvlaki with salad, wraps, pickled onion, and tzatziki.
