Lamb Souvlaki
Make delicious Lamb souvlaki at home using Lamb leg steaks.
Ingredients
- 800g trimmed lamb leg steaks, cut into 2 - 3 cm cubes
- juice from two lemons
- zest from two lemons
- ⅓ cup olive oil
- 4 cloves garlic, crushed
- 1 ½ tbsp dried oregano
- 1 tsp cumin
- 1 tsp cracked black pepper
- 1 tsp salt
- ½ cup fresh parsley, roughly chopped
- 3 lebanese cucumbers, sliced
- 200 g cherry tomatoes, halved
- ½ cup pitted kalamata olives, halved
- 1 tbsp olive oil
- 2 tsp apple cider vinegar
- salt & pepper

- tzatziki
Directions
- In a large dish or zip-top bag, combine lemon juice, zest, olive oil, garlic, oregano, cumin, pepper, and salt. Add lamb cubes and coat well with marinade. Refrigerate 2-4 hours.
- When ready to cook, drain excess marinade and thread lamb onto skewers.
- Preheat bbq grill or heavy-based pan to high. Cook lamb skewers for 5-6 minutes, turning to sear all sides. Transfer to a serving platter, cover with foil, and rest 5 minutes.
- Combine parsley, cucumber, tomatoes, olives, oil, and vinegar in a bowl. Season to taste with salt and pepper. Serve lamb souvlaki with salad, wraps, pickled onion, and tzatziki.
