Leftover Roast Brunswick Stew

Made using leftover roast meats, this stew combines beans, corn, tomatoes, and BBQ sauce for a tangy-sweet Southern twist. A clever and delicious way to reduce food waste.

Ingredients

  1. 1 1/2 pounds cooked, shredded beef chuck roast
  2. 2 (10 ounce) cans mixed vegetables, with liquid
  3. 2 1/2 cups barbeque sauce
  4. 2 tablespoons worcestershire sauce
  5. 1 (10.5 ounce) can beef broth (optional)

Directions

  1. Place the shredded roast in a slow cooker. Mix in the vegetables with liquid, barbeque sauce, Worcestershire sauce, and beef broth.
  2. Cover, and cook at least 1 hour on High.
