Microwave Beef Casserole

Quick and easy casserole made with ground beef, veggies, and cheese — all cooked in the microwave. Great for fast dinners with minimal cleanup.

Ingredients

  1. 1 pound ground beef
  2. 1 small onion, chopped
  3. 1/2 cup uncooked instant rice 1 1/2 cups water, divided
  4. 1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
  5. 1 cup slivered almonds
  6. 5 large fresh mushrooms, chopped
  7. 1 (6 ounce) package seasoned stuffing mix
  8. 1/4 cup butter, melted

Directions

  1. Crumble beef into a microwave-safe 3-qt. dish; add onion. Loosely cover and microwave on high for 5-6 minutes or until meat is no longer pink, stirring twice; drain. Stir in rice and 1/2 cup water.
  2. Cover and cook for 3 minutes. Stir in soup, almonds and mushrooms.
  3. In a bowl, combine the stuffing mix, butter and remaining water; spoon over beef mixture. Microwave, uncovered, for 2-3 minutes or until heated through.
