Orange Olive Oil Cake

Absolutely! You can bake this olive oil orange cake in an 8-inch square pan or a 9-inch round baking pan. However, with either of these, the cake will be a little thinner since it has more surface area to cover, so it may be ready a few minutes earlier.

Ingredients

  1. 2 large eggs
  2. 2/3 cup sugar
  3. 1/2 cup extra virgin olive oil
  4. 1/3 cup 2% milk
  5. 1 tablespoon grated orange zest
  6. 3 tablespoons orange juice
  7. 1 cup all-purpose flour
  8. 1 teaspoon baking powder
  9. 1/4 teaspoon salt
  10. confectioners' sugar

Directions

  1. Preheat oven to 350°. Line a greased 8-in. round baking pan with parchment. In a large bowl, beat eggs on high speed 3 minutes. Gradually add sugar, beating until thickened. Gradually beat in oil. Beat in milk, orange zest and orange juice.
  2. In another bowl, whisk flour, baking powder and salt; fold into egg mixture. Transfer batter to prepared pan, spreading evenly. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool completely in pan before removing; remove parchment. Dust with confectioners' sugar.
