Pistachio & Peach Toast

This breakfast is great when you have leftover ricotta cheese--plus it comes together in just 5 minutes.

Ingredients

  1. 1 tablespoon part-skim ricotta cheese
  2. 1 teaspoon honey, divided
  3. ⅛ teaspoon cinnamon
  4. 1 slice 100% whole-wheat bread, toasted
  5. ½ medium peach, sliced
  6. 1 tablespoon chopped pistachios

Directions

  1. Combine ricotta, ½ teaspoon honey and cinnamon in a small bowl.
  2. Spread the ricotta mixture on toast and top with peach and pistachios. Drizzle with the remaining 1/2 teaspoon honey.
