Pizzelle Cookies

Any pizzella is a good pizzella, whether perfectly symmetrical with round edges or off-center with a jagged edge. (Mine usually look more like the latter than the former, and I’ve been making pizzelle my entire life!)

Ingredients

  1. 3 large eggs, room temperature
  2. 3/4 cup sugar
  3. 1/2 cup butter, melted
  4. 1-3/4 cups all-purpose flour
  5. 2 teaspoons baking powder
  6. 1 teaspoon aniseed
  7. 1/2 teaspoon vanilla extract
  8. 1/2 teaspoon anise extract

Directions

  1. In a large bowl, beat the eggs, sugar and butter until smooth. Combine flour and baking powder; gradually to egg mixture and mix well. Stir in aniseed and extracts.
  2. Bake in a preheated pizzelle iron according to manufacturer’s directions until golden brown. Remove to wire racks to cool. Store in an airtight container.
