Ron's Grilled Shrimp

Shrimp is cooked in a grill basket after it's been marinated in a sensational medley of citrus juices, garlic, cilantro, parsley, and basil. If you don't have a grill basket, thread shrimp onto metal or soaked wooden skewers. When cooking, be sure to turn the skewers over once during cooking.

Ingredients

  1. ⅓ cup olive oil
  2. ¼ cup lime juice
  3. ¼ cup lemon juice
  4. 2 tablespoons red wine vinegar
  5. 2 tablespoons finely chopped fresh cilantro
  6. 2 tablespoons finely chopped fresh parsley
  7. 2 tablespoons finely chopped fresh basil
  8. 1 tablespoon minced garlic
  9. ½ teaspoon crushed red pepper
  10. ¼ teaspoon salt
  11. ¼ teaspoon pepper
  12. 2 pounds jumbo shrimp, peeled and deveined

Directions

  1. Whisk oil, lime juice, lemon juice, and vinegar together in a large bowl. Add cilantro, parsley, basil, garlic, crushed red pepper, salt, and black pepper; mix thoroughly.
  2. Add shrimp and toss to coat. Cover and refrigerate for 1 to 2 hours, tossing occasionally.
  3. Preheat an outdoor grill for medium-high heat. Remove shrimp from marinade and shake off excess. Discard remaining marinade.
  4. Place shrimp in a grill basket. Cook on the preheated grill, shaking the basket regularly, until shrimp are pink on the outside and opaque in the center, 5 to 6 minutes.
