Sausage Bean Stew
Smoky sausage and hearty beans come together in a savory tomato broth with herbs—filling, budget-friendly, and packed with protein.
Ingredients
- 1 pound fully cooked smoked sausage, halved and cut into 1/4- inch slices
- 2 (10 ounce) cans diced tomatoes and green chilies, undrained
- 1 (15.5 ounce) can great northern beans, rinsed and drained
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (15 ounce) can lima beans, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 teaspoon salt 1/8 teaspoon pepper hot cooked rice
Directions
- In a large saucepan, combine the first eight ingredients. Heat through. Serve in bowls over rice if desired.
