Southern Style Beef Stew

A soul-food classic with fall-apart beef, potatoes, and rich gravy, often seasoned with Worcestershire and hot sauce. Deeply comforting and full of down-home flavor.

Ingredients

  1. 1 tablespoon butter
  2. 1 1/2 pounds beef stew meat, cut into 1/2 inch pieces
  3. 1 (10 ounce) can diced tomatoes and green chiles
  4. 3 (14.5 ounce) cans stewed, diced tomatoes
  5. 1 (10 ounce) package frozen cut okra
  6. 1 (10 ounce) package frozen baby lima beans
  7. 1 (10 ounce) package frozen corn kernels
  8. 4 medium potatoes, peeled and diced

Directions

  1. Melt butter in a Dutch oven over medium-high heat. Add beef, and quickly brown on all sides. Pour in the diced tomatoes with green chilies, and stewed tomatoes. Add the okra, lima beans and corn. Bring to a boil, and reduce heat to medium.
  2. Simmer for about 1 hour. Add potatoes, and continue to simmer for another 30 minutes, or until meat is very tender.
