Sweet Potato Sausage & Apple Casserole

This sweet potato, sausage and apple casserole is perfect for brunch or dinner. The crunchy top of the toasted bread combines winningly with a custardy filling studded with apples, sweet potatoes and savory sausage.

Ingredients

  1. 1 pound sweet potatoes, peeled and cut into 3/4-inch pieces
  2. 2 tablespoons water
  3. 1 tablespoon extra-virgin olive oil
  4. 1 medium gala apple, cored and cut into 3/4-inch pieces
  5. 6 ounces mild italian turkey sausage, casings removed (about 2 links)
  6. 1 small yellow onion, chopped
  7. 1 tablespoon finely chopped garlic
  8. 1 tablespoon fresh thyme leaves, plus more for serving
  9. 8 ounces day-old whole-grain bread, cut into 1-inch pieces (about 4 cups)
  10. ½ cup shredded gruyère cheese
  11. 6 large eggs, lightly beaten
  12. 1 (12-ounce) can evaporated milk
  13. 2 teaspoons dijon mustard
  14. ½ teaspoon ground pepper

Directions

  1. Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray.
  2. Place sweet potatoes and water in a microwaveable bowl. Cover tightly and microwave on High until tender, about 3 minutes. Drain and let cool, about 10 minutes.
  3. Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add apple, sausage and onion; cook, stirring often, until the sausage browns and the apple softens, about 6 minutes. Add garlic and thyme; cook, stirring constantly, until fragrant, about 1 minute. Remove from heat and let cool in the pan, about 10 minutes.
  4. Combine the cooled sweet potatoes and the sausage mixture in a large bowl; add bread and Gruyère and toss gently. Whisk eggs, milk, mustard and pepper together in a medium bowl. Pour over the bread mixture and toss gently. Transfer to the prepared baking dish and cover with foil. Bake until the custard is mostly set, about 30 minutes. Remove the foil and continue to bake until the topping is golden brown and the custard is set, about 20 more minutes. Let stand for 10 minutes before slicing. Garnish with thyme leaves, if desired.
