Turkey Scallopini

Thin turkey cutlets sautéed in butter and lemon sauce, often served with capers or white wine. Light, elegant, and full of flavor.

Ingredients

  1. 6 turkey breast slices 1/4 cup all-purpose flour 1/8 teaspoon salt
  2. 1/8 teaspoon pepper
  3. 1 egg
  4. 2 tablespoons water
  5. 1 cup soft bread crumbs
  6. 1/2 cup grated parmesan cheese 1/4 cup butter
  7. minced fresh parsley

Directions

  1. Pound turkey to 1/4-in. thickness. In a shallow bowl, combine the flour, salt and pepper. In another bowl, beat egg and water. On a plate, combine the bread crumbs and Parmesan cheese. Dredge turkey in flour mixture, then dip in egg mixture and coat with crumbs. Let stand for 5 minutes.
  2. Melt butter in a skillet over medium-high heat; cook turkey for 2-3 minutes on each side or until meat juices run clear and coating is golden brown. Sprinkle with parsley.
